What is coffee bloom? When making pour over coffee, pour a small amount of boiling water over the grounds and wait for 30-40 seconds. You’ll notice the coffee grounds degassing, that is they release CO2 as bubbles. By releasing the CO2 before you complete your brewing you are improving the taste because CO2 infuses a sour taste into the coffee. The CO2 bubbles also repel the water which interferes with the brewing process.
